Head
Off Boned, PBO
Head Off Boned Rainbow Trout is first evicerated,
then the backbone, rib sections, anal fin, and the pin bone is removed.
(Note: The term "boned" does not mean completely
boneless).
Butterfly,
Butterfly PBO
Further processing of a
Boned Rainbow Trout removes the collarbone and all remaining fins, including
the head and tail fins, to create a Butterfly. Butterfly,
PBO is without the pin bones. The butterfly creates two tasty
fillets of Rainbow Trout, joined together by a center section of
skin.
Fillet, Filled
PBO
Fillet is half a Butterfly, which is created by
cutting the center section of skin to yield two fillets. Each fillet has the
skin remaining on one side to retain the unique character of a Rainbow Trout.
The Fillet, PBO is the most dressed trout,
with the small pin bones removed by machine.
